BLT PASTA SALAD

Ingredients

  • 200 gr carrot radiatori
  • 1 small red onion
  • handful vegetarian bacon
  • two handful butter lettuce
  • handful cherry tomatoes
  • 3 tbsp mayonnaise
  • 1 tsp lemon juice
  • salt and pepper

Instructions

  • PREPARATION: 
    Cook your VeggiPasta according to the instructions on the package and let it cool down.
    Chop the onion, cut the butter lettuce into chunks and the cherry tomatoes in half.
    In a small bowl, mix mayonnaise with lemon juice.
    Combine all ingredients together and season with salt and pepper. 
    STORAGE:
    If you leave out the butter lettuce and add it before each meal, you can keep the pasta in the fridge for 2 days.
