VEGGIPASTA ALLA VODKA WITH PUMPKIN ZUCCA

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion
  • 1 clove garlic
  • 4 tbsp tomato puree
  • 200 ml cooking cream
  • 50 gr bacon strips
  • 40 gr Parmesan cheese
  • 1/2 tsp chili flakes
  • 1 tbsp Vodka
  • black pepper to taste
  • 1 sprig of parsley
  • 150 gr Pumpkin Zucca

Instructions

  • PREPARATION
    To prepare the sauce, chop the onion and heat in a pan with 1 tbsp olive oil.
    Fry briefly and crush a garlic clove in it.
    Add in the tomato puree and fry until the color darkens.
    Briefly fry the vegetarian bacon and pour in the cream along with the chili flakes and Parmesan cheese.
    Meanwhile, cook your pasta according to the instructions on the package until al dente and pour some of the cooking liquid into your sauce.
    Chop the parsley and season the sauce with vodka and black pepper and combine with pasta.
    Serve with finely chopped parsley and some extra Parmesan cheese.
    VARIATION 
    The vegetarian bacon is optional, this pasta is just as tasty without the vegetarian bacon.
    STORAGE 
    The pasta sauce can be stored 2 days in the refrigerator without the vodka. Finish the sauce when reheating it.
