GREEK VEGGIPASTA SALAD

Ingredients

  • 1/2 red onion
  • 3 tomatoes
  • 3./4 cucumber
  • 200 gr feta cheese in cubes
  • 5 tbsp sliced black olives
  • 300 gr VeggiPasta Beautiful Beetroot
  • olive oil
  • salt and pepper

Instructions

  • PREPARATION
    Boil pasta according to instructions al dente, drain and set aside to cool.
    Finely slice up your red onion, rinse and drain to remove harsh flavor.
    Cut tomatoes in wedges and dice cucumber and feta.In a bowl mix onions, tomatoes, cucumber, feta, olives and pasta.
    Season with olive oil, salt and pepper.
    Best served immediately.
    STORE
    When your pasta salad is done it will keep for up to 2 days in the fridge.
